- 2 purple sweet potatoes
- pinch of sea salt
- 1 Tsp ground black pepper
- 1 Tbsp avocado oil
- Preheat oven to 400 deg F.
- Wash up the potatoes.
- Leaving the skin on, dice into preferred bite size.
- In a clean bowl, mix potatoes with oil, salt and pepper.
- Spread on foiled baking sheet and bake for 25 minutes.
P.S. I had mine with a zucchini saute and some fresh tomatoes.
