You need;
- 3-1/2 cups water
- 1 Tbsp Olive oil
- 2-2/3 cups pearled couscous
- 1/2 tsp turmeric
- 1/2 tsp sea salt
Steps;
- In a medium pot, bring water to a boil.
- Add oil, turmeric, salt and couscous. Reduce heat and simmer covered for about 10 minutes stirring occasionally.
- Remove from heat, let stand 5 to 10 minutes and fluff with fork to separate.
- Add roasted veggies either on the side or fully mixed in.(I used peppers, onions, tomatoes and broccoli).
Serves about 6 to 8 people and great for leftovers.

Hey Karen, thanks for stopping by ๐. Couscous has to be one of the easiest and quickest meals one can make. It takes about 10 to 15 minutes from start to finish to have a well rounded dish at your table. Hugs๐๐
This is a wonderful combo. I sometimes add 1/2โ1 teaspoon of cumin.
It’s to die for Miss Peggy ๐. Maybe not die, die but it’s really good. Cumin sounds like a great idea. I will have to try it next time I make it.
I make a very similar recipe and the results are always superb. The cumin is ad great addition. Sometimes I use Moroccan spice instead. Cheers

Haha! I haven’t had it since I was younger, in my teen years. Back when my mum would make it for me. Ah the memories. This is something I need to make my future kids. So fun to eat. I put it in the same category of fun as mac and cheese.
