- 3-1/2 cups water
- 1 Tbsp Olive oil
- 2-2/3 cups pearled couscous
- 1/2 tsp turmeric
- 1/2 tsp sea salt
- In a medium pot, bring water to a boil.
- Add oil, turmeric, salt and couscous. Reduce heat and simmer covered for about 10 minutes stirring occasionally.
- Remove from heat, let stand 5 to 10 minutes and fluff with fork to separate.
- Add roasted veggies either on the side or fully mixed in.(I used peppers, onions, tomatoes and broccoli).
Serves about 6 to 8 people and great for leftovers.

Hey Karen, thanks for stopping by 💝. Couscous has to be one of the easiest and quickest meals one can make. It takes about 10 to 15 minutes from start to finish to have a well rounded dish at your table. Hugs💝💝
This is a wonderful combo. I sometimes add 1/2–1 teaspoon of cumin.
It’s to die for Miss Peggy 😁. Maybe not die, die but it’s really good. Cumin sounds like a great idea. I will have to try it next time I make it.
I make a very similar recipe and the results are always superb. The cumin is ad great addition. Sometimes I use Moroccan spice instead. Cheers

Haha! I haven’t had it since I was younger, in my teen years. Back when my mum would make it for me. Ah the memories. This is something I need to make my future kids. So fun to eat. I put it in the same category of fun as mac and cheese.
