Pearl couscous and veggies

You need;

  • 3-1/2 cups water
  • 1 Tbsp Olive oil
  • 2-2/3 cups pearled couscous
  • 1/2 tsp turmeric
  • 1/2 tsp sea salt

Steps;

  1. In a medium pot, bring water to a boil.
  2. Add oil, turmeric, salt and couscous. Reduce heat and simmer covered for about 10 minutes stirring occasionally.
  3. Remove from heat, let stand 5 to 10 minutes and fluff with fork to separate.
  4. Add roasted veggies either on the side or fully mixed in.(I used peppers, onions, tomatoes and broccoli).

Serves about 6 to 8 people and great for leftovers.

    1. Hey Karen, thanks for stopping by ๐Ÿ’. Couscous has to be one of the easiest and quickest meals one can make. It takes about 10 to 15 minutes from start to finish to have a well rounded dish at your table. Hugs๐Ÿ’๐Ÿ’

      1. I make a very similar recipe and the results are always superb. The cumin is ad great addition. Sometimes I use Moroccan spice instead. Cheers

  1. I’m definitely going to try this…switch up my standard stir-fry a bit. Plus, for some reason, I have oodles of turmeric!

      1. Haha! I haven’t had it since I was younger, in my teen years. Back when my mum would make it for me. Ah the memories. This is something I need to make my future kids. So fun to eat. I put it in the same category of fun as mac and cheese.

    1. Most of my cooking is Inspired by Ugandan traditional cooking where meet is more of a seasoning. Also decided to lean more towards vegetarian cooking after my cancer occurance in 2011.
