Honestly, the word “vegan” used to send me running and more so the thought of not consuming all the yummy goodness like whole dairy milk was scary until we realized that both our babies plus hubby are allergic to dairy (they can still eat cheese and yogurt) but we have chosen to greatly minimize that. So over the past few years we have started to find ways of making our dairy free recipes taste better and oatmeal is one of those
Ingredients
- 6 cups of water
- 3 cups oats
- 1/2 a teaspoon ginger powder
- 1/2 a teaspoon cinnamon
- 1/4 teaspoon sea salt
- 1/4 cup coconut oil
- 1 tablespoon chia seeds
- 2 tablespoons raw honey
- 1/2 a cup unsweetened coconut milk
Bring water to a boil, add salt, oil and oats. Cook for about 10 minutes or desired consistency over medium heat. Then add ginger, cinnamon, chia seeds, coconut milk and honey and mix well. Serve and top with favorite topping. Our favorites are pumpkin seeds, hemp seeds, raw walnuts and blue berries.
A question: how many servings with this recipe? I am the only one who has oats for breakfast and I just don’t see myself eating 6 cups😄!
That gives us 5 servings. I have since cut down the coconut oil to one table spoon.
