White bean italian chicken soup

    Went straight to our church potluck.

    1 lb. great northern beans, soaked overnight and cooked with a little crunch (Not to soft)

  • 1 lb. Italian chicken sausage
  • 1 large diced onion
  • 1 cup diced celery
  • 1 cup diced carrot
  • 1 Tbsp. minced garlic
  • 2 Tbsp. italian seasoning
  • 2 quarts chick broth


Brown sausage and set aside, saute onions, carrots and celerey until soft.Smash half of the beans with a folk and then add all the beans to the pot along with browned sausage and the veggies, then add the broth and extra seasoning with salt and pepper. Bring to a boil then simmer for approximatelt an hour .

Server with sour dough bread or rice or just have a good soup bowl all by itself.
