I rarely make mashed potatoes because of the boiling part of the stove top. Needless to say, we do love them…….the only twist here is that they have to be completely dairy free!!!! due to allergies and health concerns.
This recipe is simple but super delicious.
- 6 to 7 peeled and washed Yukon potatoes
- cold water to cover
- 3 cloves of garlic
- pinch of sea salt
- 2tsp turmeric powder
- 3tbs coconut oil
Toss the first 4 ingredients in a crock pot and cook on high for 4 hours.
Drain excess water then add coconut oil and turmeric.
Using a hand mixer,whip for about 2 minutes
Serve immediately or turn crock-pot to warm if you need time before eating
p.s I will be serving mine with oven baked Salmon and quick steamed broccoli
