Ingredients

- 3 eggs
- 2 very ripe bananas – mashed
- 3 cups Quick or Old Fashioned oats
- 1 and 1/2 cups Coconut milk
- 1/4 cup currants
- 1/4 cup sun flour seeds
- 1/3 cup honey
- 1/4 cup avocado oil
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 teaspoon vanilla
In a large bowl, lightly beat the eggs. Add all remaining ingredients. Stir until well combined. Let mixture set for 30 minutes for oats to absorb some of the liquid.
Preheat oven to 350 degrees.
Stir mixture once more and transfer to an 8 x 8 baking pan that’s been coated generously with coconut oil. (You could also use 2 small loaf pans.)
Bake at 350 degrees for 35 minutes.
P.S. for gluten free, use gluten free oats.
I’ve never seen this before, it’s an interesting variation and looks good.
It’s really good and easy snack for kids. Lately the entire family has become allergic to dairy accept myself. I have given in to avoiding dairy as well for the sake of my babies and hubby.๐
I have problems with dairy as well, sometimes I can eat a dairy product and it wont bother me, and other times, I will be feeling the effects. I can’t give up pizza, impossible.
๐๐๐๐. My husband has the same issue. He is allergic to dairy but would rather suffer than give up Pizza.
