Gluten Free peanutbutter muffins

  • 1/2 c peanut butter
  • 1/2 c quick oats
  • 2 tbs ground flax seed
  • 2  ripe mashed bananas
  • 1/4 c honey
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 c chopped walnuts
Preheat oven to 350 degrees.  Grease muffin tin or use liners.
Combine all wet ingredients in a blender and mix until smooth.  Add peanut butter and mix briefly before adding all the dry ingredients with 1/4c walnuts; mix until just combined.
Hand stir in remaining walnuts and portion into muffin tins.
Bake for 18-20 mins, or until a toothpick comes out clean.
