Quinoa, Lentil and Cranberry Salad

 

  • 2 cups uncooked quinoa(soaked for 30 minutes,rinsed and cooked in 4 cups of water)
  • 1/2 cup uncooked lentils(rinsed and boiled for 25-30 minutes then cooled)
  • 1 cup dry cranberries
  • 1/4cup olive oil (heated )
  • 1 large onion(chopped then caramelized in the hot olive oil, then cooled)
  • 1tsp sea salt
  • 1tsp turmeric
  • 1/4tsp cayenne

Combine all and enjoy warm or cold
