Ingredients
- 4 – raw plantains (green, peeled and chopped)
- water to cover in large pot
- 2 tbsp coconut oil
Directions
Boil the plantain for about 15- 20 min. drain leaving a little water and add the coconut oil. Smash and Enjoy.
Enjoy with lentils, avocados, beans, beef stew or pico de gallo….. You pick!!!!!
