Winter Quinoa Salad

Made up this recipe last night and it was simply delicious.
Soaked 2 cups of quinoa for abt 20 min and then rinsed it off and added it to 3 cups of boiling water.Left it to boil for 3 min and then turning it to low heat cover with a lid for 20 min.Once it was don,i fluffed it with a fork and put it in a serving bowl  mixing it with sauteed veggies;Mushrooms,onion, bell peppers, garlic and spiced up with sea salt, turmeric, sage and paprika
Topped with a drizzle of good olive oil.
