Lemon yogurt cake


~ 1-1/2 c all-purpose flour
~ 2 tsp aluminum free baking powder
~ 1/4 tsp salt
~ 1/2 c sugar
~ 1 c plain whole milk yogurt
~ 3 large eggs
~ finely grated peel from 1 lemon
~ juice of half a lemon (or whole if you like)
~ 1/3 c vegetable oil (i used avocado oil)
 Preheat over to 350 deg F and prepare large bunt pan.
Mix dry ingredients except sugar in medium bowl.
Combine yogurt, sugar, eggs, lemon peel and lemon juice in a large bowl; whisk until well blended. Gradually whisk in dry ingredients. Use rubber spatula to fold in oil.
Pour batter into prepared pan and bake for 35-40 min.
