Rice and Lentil Loaf
- 1 1/2 cups cooked and mashed lentils
- 3 cups cooked brown rice
- 2 shallots
- 3 tbs olive oil
- 1/2 tsp salt
- 1/4 tsp turmeric (optional)
- 1 cup shredded zucchini (optional)
Instructions:
-Saute shallots in oil over medium heat until golden brown
-Mix all ingredients together and pour into a coconut oil greased 9″x13″ pan
-Bake at 350 Deg for 40 min
(Can also be frozen before you bake for a later meal)
- 5 oz Mixed salad greens
- 1 ripe Avocado (smashed)
- 1 tbs Grape seed oil
- Pinch of salt
Instructions:
-Toss and Serve
