Rice and Lentil Loaf with Avocado Salad

Rice and Lentil Loaf

  • 1 1/2 cups cooked and mashed lentils
  • 3 cups cooked brown rice
  • 2 shallots
  • 3 tbs olive oil
  • 1/2 tsp salt
  • 1/4 tsp turmeric (optional)
  • 1 cup shredded zucchini (optional)

Instructions:
-Saute shallots in oil over medium heat until golden brown
-Mix all ingredients together and pour into a coconut oil greased 9″x13″ pan
-Bake at 350 Deg for 40 min

(Can also be frozen before you bake for a later meal) 

Avocado Salad

  • 5 oz Mixed salad greens
  • 1 ripe Avocado (smashed)
  • 1 tbs Grape seed oil
  • Pinch of salt

Instructions:
-Toss and Serve
